These can be eaten as a dinner with a salad, a snack in-between meals, or wrapped up and taken for lunch during the work week. I used whole-wheat dough, and kept the cheese out of the mix this time. This is rare for me as cheese=my fave! Since it is the beginning of the work week, I opted for the easiest dinner a girl could make: pasta and salad with ice cream for dessert. Too easy, yet still delish and loved by all. <br /><br />I bought the pasta sauce and meatballs at a local Italian deli, which is superb! Rarely will I buy pre-made foods. However, you can tell the deli serves fresh, homemade, authentic foods. I had additional toppings on the side as not everyone likes the same things. The other toppings were: sliced-n-diced leftover grilled chicken, cheeses, fresh cut off the cob-corn, basmati rice, avocado, dried cranberries, sunflower seeds, and sliced almonds. <br /><br />God, I really love salads and salad toppings way too much! Slice and dice the chicken breast. <br />2. Place cut chicken into a pan set to medium heat with garlic and 1-2T. It's just about that time of year again; the weather is warming up and the scenic beauty of the <a href="http://www.cliffwalk.com/">Newport Cliff Walk</a> is just what the doctor ordered. <br />

There's no better way to re-charge and re-connect with your honey than going for a brisk walk, breathing in that cool salt air, and taking in the sights this walk has to offer. The sights include the beautiful historic mansions, the ocean, cliffs (obviously), tunnels, boulders, and beautiful landscapes galore. It is peaceful, mind-clearing, and totally free! <br />

It's been a busy week but I'm glad to be back, writing this post! <br />

This past week I decided to take my first trip to <i>Trader Joe's</i>. I've been reading various food blogs and seeing lots of great comments about the store. Needless to say, these bloggers were right...<i>Trader Joe's</i> is awesome! They have cheap deals on organic fruits and an immense selection of dried fruits, nuts, and yummy healthy treats. It's a great grab a few, fun, healthy items store, but I don't think I could do a full grocery shopping there. If you're into pre-made organic meals, TJ's has lots of options, but pre-made really isn't my thing! I liked the cheap cheese selections and did not love the meat section or lack of deli. TJ's seems to have something for everyone but not everything for everyone. Try it out sometime, I am sure you will fall in love with at least one aspect of TJ's. <br />

One item I ordinarily wouldn't try is pre-made soup. However, I bought a container of <i>TJ's Black Bean Soup </i>to keep in the cupboard for a quick dinner or a lunch once all my other food items have run out. <br />

All I could think about was yummy, fattening sausage and peppers. I don't usually keep fatty foods in my house, so I was outta luck. I created a <i>Sausage and Peppers Mockery</i>. It was more delicious than I imagined. Here's how to make it: <br /><br /><b>Sausage and Peppers Mockery</b>:<br />(Serves 4) <br /><br /><b>Ingredients</b>: <br />-EVOO (thanks Rachel Ray)<br />- 2lbs. Ground Turkey<br />-2 Bell Peppers (chopped)<br />-1/3 Onion (chopped)<br />-1 t. Crushed Garlic<br />-Baby Spinach (optional)<br />-Salt <br />-Pepper<br />-2-3 Cups of Cooked Brown Rice <br /><br /><b>Steps</b>: <br />1. Set skillet to medium heat. 1. (Set oven to 350) Rinse chicken and remove innards. <br />

5. Chicken is done when it's crispy on the outside and has no pink tones within the chicken when you slice it. <br />

You're hungry and you just want to EAT! Here is a quick and simple meal idea that is also healthy. It also does not involve much cooking. My dinner idea for today is mini-buffet of pickies, leftovers, and healthful snacks. <br /><br /><br /><br /><center><a href='http://photo.blogpressapp.com/show_photo.php?p=11/04/12/3254.jpg'><img src='http://photo.blogpressapp.com/photos/11/04/12/s_3254.jpg' border='0' width='252' height='281' style='margin:5px'></a></center><br /><br />O.K. Here it is...<br /><br />Recipes: <br />(All together- Serves 2-3)<br /><br />Salad:<br />Ingredients:<br />-1/2 Bag Spinach<br />-1/2 Bag of Ice Burg Lettuce Mix <br />-4 T. Green Olives <br />-4 T. Tabuleh Salad <br />-1 Bell Pepper (chopped) <br />-1/2 Cucumber (sliced) <br />-1/4 Cup of your favorite dressing (I used <i>Northern Italian</i>)<br /><br /><br />Steps: <br />1. Combine all ingredients in a bowl and top with your favorite dressing! Enjoy! <br /><br /><br />Berry Plate: <br />Chop up 8-10 large strawberries, lay them out to be gobbled up-Yum! <br /><br /><br />Grilled Cheese Sandwiches: <br />Ingredients:<br />-4 Slices of 12 Grain Bread <br />-6 Slices of American Cheese<br />-8 Thin Slivers of Butter<br /><br />Steps: <br />1. Set frying pan to medium heat, add 2 slivers of butter. <br />2. Put 3 slices of cheese in-between 2 slices of bread. <br />3. Cook until golden brown on bottom side. <br />4. Add 2 more butter slivers to the pan and flip the 'wich'. <br />5. The cheesy is done once both sides are golden brown. <br />6. Repeat these steps to create 'which #2'. <br />7. Be sure to turn off the stove and enjoy your sandwiches. <br /><br /><br />Leftover Ritz Encrusted Sole: <br />-4 Thin Sole Filets <br />-1 Sleeve of Ritz Crackers<br />-4 Slivers of butter<br />-A Few Squeezes of Lemon <br /><br />1. Set oven to 400 F. <br />2. Crush ritz into teeny tiny crumbs <br />3. Lay sole into a pan and cover with cracker crumbs. <br />4. Lay a sliver of butter on each filet. <br />5. Squeeze lemon over filets. <br />6. Cover pan with foil; cook 20-35 mins- until fish is flaky. <br />7. In a large bowl, whisk eggs and milk with bacon bits, salt, and pepper.<br />2. Set frying pan to medium heat, melt 2 butter slivers and add 1/2 of the egg mixture to the pan. <br />3. When egg mix begins to cook, throw in 1/2 the chopped tomatoes, peppers, and 1slice of cheese. <br />4. Use a spatula to fold omelette over and cook until it is slightly golden brown on each side (the egg should not be runny in the middle). <br />5. Man, I wish everyday was like Sunday! The day began with weight training with my loved one and some pals (yes, they kicked my butt). It was intense but felt so good. I even pushed and pulled a sled of weights, MUCH heavier than my body weight, thank you! One more thing, I never thought I could lift 20lb dumbbells never mind doing reps with them. Yes, I am proud of myself (feel free to laugh at me)! We decided to head down-city and head to a minor league hockey game. Go Providence Bruins! You have to head to downtown Providence on a nice-weathered Sunday. There were loads of people sitting outdoors enjoying food and day-drinks, and tons of adorable eclectic shops to peek in. It is also a great place to sight see and people watch. In our short journey we saw tripped out banana-seat bikes, a cross-dresser, and some fun artsy intellectual folk. <br /><br />Ok, so the game was totally fun (even though they lost-I swear I'm bad luck). These minor league games are always cheap but yet a good time. Certain companies will give tickets to these games away for free. We were lucky enough to get tix for free from our generous friends. Hockey season is almost over, but maybe you could make it to a baseball game. Instead of deep fried shrimp and cheesy mashed potatoes, I have Lemon Sesame Shrimp and Spinach-Smashed Potatoes. Butter<br />-2 Lemon Segments<br />-1 T. Crushed Garlic <br />-A Few Pinches of Sesame Seeds<br />-Salt<br />-Pepper<br /><br />Steps:<br /><br />1. Defrost 1lb of frozen shrimp. If you are in a pinch for time, you can use a hot water rinse or the microwave (defrost setting-be sure not to over heat/cook it). <br />2. Place thawed shrimp into large frying pan, along with butter and garlic. Set the heat to medium. <br />3. As you sauté the shrimp, throw in a few pinches of sesame seeds and squeeze the lemon segments over the shrimp (then discard). <br />4. Sauté shrimp for about 20 minutes. <br />5. Sized Red Potatoes<br />-1 Cup Frozen Spinach<br />-1 T. Butter<br />-1/2 Cup of 2% Milk<br />-3/4 Cup of Cheddar Cheese (shredded) <br />-Salt<br />-Pepper<br /><br />Steps:<br /><br />1. Rinse and dice potatoes (leave the skin on). <br />2. Bring a large pot of water to a boil. <br />3. Carefully place diced potatoes into the boiling water. <br />4. Keep the stove set the same (medium) and let the potatoes boil for 20 minutes. <br />5. Add spinach to the boiling pot. <br />6. Let all of the potatoes and spinach boil for another 5-10 minutes (until the potatoes are easily sliced with a butter knife). <br />7. Use a strainer to remove water from the food. <br />8. Turn heat off. <br />9. Place potatoes and spinach back into the warm pot. <br />10. Use a fork to smash potatoes. <br />11. Add milk, butter, and cheese to the pot- keep smashing and stirring. <br />12. Now add salt and pepper to taste. It is a tea beverage that is mixed in with fruit, milk or juice. There are many variations and combinations. It also contains small 'boba' pearls, or "tapioca chewy balls" like they call them at the Bubble Tea House.<br /><br />The boba pearls part of the drink FREAKED me out, as I am NOT a huge fan of tapioca pudding. I decided I would put my fears aside and try it out anyways. Boy, I was pleasantly surprised! The boba pearls have a similar texture and taste to gummy candies. It was very sweet and would be a perfect treat on a hot day. Mr. D-Dates tried a large plain lemon bubble tea. The lemon bubble tea was less sweet but just as delicious. When I go again, I will be sure to order a large, it is only 25 cents more and quite a bit bigger! Yum! <br /><br />The Bubble Tea house has a unique atmosphere with its big bamboo pillars and Asian inspired decor. There are couches and tables you can sit at and catch up with your loved one. It's always fun to try new things together. <br /><br />This would also be a great place for a first date. You can sit down and talk and get to know each other while indulging in a sweet, different treat. This time of year is best for seeing the seals. It is also best to <strong>bring binoculars</strong> as the rocks are a distance off shore. The seals will be sunning themselves and if you're lucky, you may see some seals showing off; jumping and doing some tricks in the water. </span><br />

It is such an amazing place and it is absolutely <strong>FREE</strong>. So head out this weekend, check out the seals and if you have a pup, bring him along for the hike---he'll love you for it!
